A traditional Sicilian recipe, pasta alla Norma owes its name to “Norma”, the famous Sicilian melodrama by Vincenzo Bellini. Her godfather is Nino Martoglio. The legend finds the Sicilian author being excited by the taste of pasta (usually penne) and their eggplant Mediterranean sauce. Then he exclaimed “Norma!”, likening their taste to his favorite opera.
