In the stone square full of colourful woven carpets of Neochori, the members of the local Women’s Association welcome Slovenian beekeepers and dancers from Greek High Schools, organizing a patinada (walk) in the settlement, which ends at its most central point, to give the baton to the workshop.
They all watch “how the dry louvidia are cooked in Neochori and the surrounding area with pork”. They learn how to grow them from the local bean growers, watch how they are collected (in summer) and rolled (threaded), so that they can be dried and preserved throughout the winter. When they are going to be cooked, they are soaked in water, in order to soften, boil easily, and create a tasty and very nutritious dish (superfood).
Then the grills light up, the local sausages and the sourdough bread are offered in abundance, the Macedonian tsipouro flows strong and abundant and the dances “give and take”!
